Calling all chocolate lovers! The Food Network introduces six new luscious chocolate recipes from Food Network Kitchens. These recipes are made to cure your chocolate craving and send you directly into cocoa heaven.

“Chocolate 101” provides basic learning techniques and how-tos on chocolate handling and perfecting supreme chocolate desserts. Each recipe is presented with simple and easy to follow instructions so that the stress of your chocolate delight not coming out scrumptious is quickly eliminated. “Chocolate 101” does not waste anytime presenting some of the most delectable and delicious chocolate desserts that anyone would love to serve at their next party or for an everyday treat.

For my own personal chocolate hideaway, my favorite recipes are the S’more Brownies and the Chocolate Pound Cake. The S’more Brownies are an old campfire favorite that has been brought back in a whole new way. The S’more Brownie recipe not only perseveres the original s’more ingredients but also adds a double whammy of chocolate and more chocolate in order to make this recipe more than a delicacy on a stick. The Chocolate Pound Cake with chocolate glaze should be dubbed “ sinfully illegal”. This recipe calls for Dutch cocoa powder and bittersweet chocolate for an extra rich and chocolate pleasure. Other chocolate recipes include, Chocolate Truffles, Chocolate Mousse, Chocolate Soufflés, and Carmel Fudge Sauce.

“Chocolate 101” also offers helpful tips on chocolate basics. I especially liked the tip on microwave melting of chocolate by just adding butter so that it will remain smooth and tasty. The other seven tips are chocolate chopping, Bain Marie, perfectly melted chocolate, seized chocolate, piping chocolate (in making truffles), writing in chocolate, and chocolate curls.

    I thoroughly enjoy the food channel. I especially appreciate the change in time of "Paula's Party" from 10:00 to 9:00. I hope this is a permanent time change. Thanks for the great shows.
