This was the longest interview we’ve done. We planned on sitting down for half an hour and almost two hours later, I realize that this is the guy you want invited to every dinner. He’s got the story on all the New York celebrities, the dish on which chefs are overhyped, the history (and behind the scenes drama) on every major restaurant opening in the last 20 years, and the best part is, he’ll tell it to you all… in full detail.
What I love about Drew is that he’s that mom and pop owner, who still wants to know everyone by their name, still wants to know if you enjoyed your meal, will send over a glass of wine if you’re a regular. I thought one of the most interesting (and telling) things he talked about was the art of making and taking a reservation. If you’re rude on the phone, if you’re consistently late, the staff at Nobu will put a mark near your name, so the next time you (or your rude assistant) make a reservation, they may be booked… forever. Just goes to show that those entitled assholes we’ve all encountered in the waiting area at restaurants aren’t always welcome. Karma is a bitch…
