Summer is almost here and the hunt is on for the most satisfying cool drinks to enjoy on a balmy evening.
Pimms is high on many people's list of summer drinks; the addition of summer fruits such as strawberries, borage and cucumber give the punch an immediate appeal for outdoor quaffing.
Many people have tried their hands at making elderflower champagne with mixed results. Elderflower champagne can be a volatile brew and the wary may prefer to use elderflower cordial which can be easily made but is widely available in shops, unlike the champagne which really has to be homemade.

The first drink in this selection uses elderflower cordial to effectively make a turbo charged elderflower champagne, delightfully called Twinkle.

Twinkle
Ingredients
25ml vodka
15ml elderflower cordial
Champagne
Method
Shake quickly together, strain into a large coupette, top with champagne and garnish with lemon twist.
Blood orange and orange blossom bellini
Ingredients
50ml blood orange purée
1 dash orange blossom water
125ml prosecco
Method
Stir ingredients gently in a mixing tin, pour into a champagne flute.

25ml rose vodka
15ml rhubarb cordial
Dash Peychaud’s Bitters
Method
Stir ingredients together, strain into a large coupette, garnish with a grapefruit twist.
