Recipes for a Romantic Meal

Would you like to romance your loved one with a fancy, delicious, and very impressive meal? Well here is your recipe for success. With the three recipes below, you will win over your date/lover and keep them wanting more. My fiancé cooked this very elegant meal for me last Valentine’s Day and made me fall in love with him even more. And let’s be honest, I’d bet money on it that he’d say the effort from the meal is all worth it for the dessert afterwards.

Spicy Capellini Pasta

Ingredients:
1/3cup olive oil
8 slices bacon, chopped
2 medium onions, chopped
10 peperoncini, drained, seeded, and chopped
35-ounce can whole peeled Italian tomatoes, drained and roughly chopped
Kosher salt
1 pound dried angel hair pasta
3/4cup freshly grated Parmigiano Reggiano
1/3cup chopped fresh flat-leaf parsley (optional)
Serves 6
10 minutes prep time/30 minutes cook time

In a large, nonreactive skillet, heat 3 tablespoons olive oil over medium heat. Add the thinly sliced bacon to the heated olive oil and cook until lightly golden brown, about 10 minutes. Add the fine chopped onions to the deliciously golden brown bacon and cook, stirring occasionally, until the onions have caramelized and are golden, about 15 minutes.

After the bacon and onions are sautéed to a beautiful bronzed color, add the delectable spicy peperoncini, juicy drained tomatoes, and ½ teaspoon of kosher salt. Simmer for about 10 minutes. If you are not a tomato fan, this dish is still scrumptious and right for you. Instead of chopping the whole peeled tomatoes, keep them in their rounded shape. After the meal has been prepared, just take out the tomatoes. This leaves a fresh somewhat marinara taste, but isn’t full of tomatoes.

Meanwhile, bring 4 quarts salted water to a boil. Add the dried angel hair pasta and cook until al dente, about 3 minutes. Drain the pasta and toss it with the remaining olive oil. Stir the mouth-watering sauce into the cooked pasta.

Add the freshly grated Parmigiano Reggiano, toss well to get the luscious sauce over every inch of the pasta, and serve immediately. Garnish with the parsley if you like. (This is also the point where you can pick out the rounded tomatoes.)
You can prepare the Arugula salad before/while making the pasta dish. Just make sure that the salad is cold and crisp.
