Simple Treats is a cookbook that features recipes that are vegan, wheat free and dairy free. The recipes include: Muffins and Breads; Cookies; Cakes; Cremes, Frostings and Glazes. The author is a vegan who was searching for vegan treats that were not only healthy but delicious. She was frustrated with vegan treats that contained refined sugar and organic treats containing dairy products. She wanted something vegan and healthy with no hydrogenated fats, refined sugars, dairy products, wheat or artificial ingredients and she wanted it organic. After years of research and experimentation, they came up with the recipes in this cookbook.
There is a very handy section in the front of the book that speaks about baking vegan-style. If you're not familiar with vegan baking, don't expect it to work the same as traditional banking. Vegan products don't rely on eggs for leavening. They rely on baking soda and baking powder so they need to be prepared quickly before the chemical reaction in the mixture fizzles out. There's also a very helpful section that defines some of the terms used in the cookbook like vegan, GMO, organic, wheat free, refined sugar, etc. There's even a glossary for more information on the definitions.
Each recipe includes the title, a brief description of what the recipe is along with possible substitutions. The recipe also includes an ingredients list and detailed instructions. Recipes also offer information on calorie content, protein, fat, carbohydrates, fiber and sodium content. They're easy to follow and well written using ingredients that can commonly be found at your local health food store.
I found the section on The Well Stocked Vegan Baking Pantry to be extremely helpful. It gives you a great starting point to stock your pantry with commonly used items as well as a list of items that are helpful to have on hand but not crucial. As someone who regularly bakes gluten/wheat free but not always vegan, I found this extremely helpful. For those new to baking, there is also a section on Tools for the Baker that lists the basics every kitchen needs for baking.
All in all, this is a great cookbook for anyone but especially for someone new to vegan, wheat free or dairy free baking. It's helpful, loaded with information a newbie might need and has simple but tasty recipes.
