Now this is the part where it is ok to double dip. Add the rolled chicken into the eggs. Make sure it is completely covered and then add it to the breadcrumbs. Now “double dip”. Go back to the eggs, submerge then roll back into the breadcrumbs. Now add the chicken to the hot oil. Use tongs and allow the oil to brown the breadcrumbs. Give each side a few seconds and slowly turn the chicken until all sides are slightly brown. This allows the breadcrumbs to seal onto the chicken. Once complete, add to a baking pan with cooking spray on the bottom. Complete the double dipping process to all the chicken and throw them in the oven for approximately 30 minutes.
Keep an eye on them. If you see a lot of cheese oozing out the sides, cut one open and check to see if the chicken is cooked through. The baking time will depend on how thick your chicken breasts are. Again guys, they say a way to a man’s heart is through his stomach but I have learned it is really the other way around.
You can also get creative with this recipe as well. You can add Parmesan cheese to the breadcrumbs to give it a cheesy taste. You can also stuff the chicken with broccoli and cheddar cheese or ham and cheese.
