Breakfast with the Girls: Bisquick Apple Coffee Cake

Some rituals don't stand the test of time. They're forgotten with the change of seasons, when the spring weather beckons outside or the calendar fills up. But my Friday morning coffee date with my girlfriends is impervious to it all. It might even prove more reliable than the postal service!

When it's my turn to host, I like to serve something hot out of the oven. If truth be told, we definitely try to outdo each other in the breakfast baked goods department. Today, I whipped up this Bisquick Apple Coffee Cake. I prepared the dough the night before, knowing how hectic mornings can be getting the kids off to school. By the time the ladies arrived, the house was filled with the aroma of cinnamon and apples and I was ready for a little relaxation with the ladies.

Bisquick Apple Coffee Cake (Adapted from Simply Recipes)
Ingredients:
Cake:

2 cups Bisquick mix
2/3 cup of 2% milk
4 Tbsp sugar
1 tsp of vanilla extract
1 egg
3 small green apples, cored, peeled, thinly sliced

Topping:

1/3 cup Bisquick mix
1/3 cup packed brown sugar
1/2 tsp ground cinnamon
4 Tbsp butter
Method

1 Preheat oven to 400 degrees F.

2 Grease a 9" round pan. Mix cake ingredients. Spread cake batter in pan. Insert apple slices into the batter evenly throughout the cake, pressing well to incorporate.

3 Mix the topping ingredients of Bisquick, brown sugar and cinnamon. Spread topping mix over top of batter in pan. Add slices of butter all over the top, licking your lips in anticipation of that buttery goodness.

4 Bake 20 minutes or until golden brown, testing with a toothpick.
