Apple Pie Pancakes

Lately I have noticed my children’s tastes and choice of foods are expanding. One way I have found to broaden their horizons, so to speak, is with pancakes. If you think about it, pancakes are an empty canvas just waiting for their next big adventure in flavor.

So far we have tried chocolate chip, blueberry and banana in our pancakes. That got me to think, there is no reason why I can’t get even more adventurous with the syrup. When I was a kid, my brother loved the simple syrup I would make him, the only difference, is I would put my Mom’s amaretto extract in it. To this day he still remembers my syrup.

I have made simple syrup for the kids. I have also made them strawberry and blueberry syrup. But recently I have had a craving for apple pie and then it hit me, why can’t we get the same warm, fresh-out-of-the-oven, apple spice joy from a pancake? That was how the following recipe was born, which my kids love.

Pancakes with Apple Pie Syrup

Peel and thinly slice two sweet apples of your choice. Add the apple sliced in a sauce pan on medium heat. Also add one cup of brown sugar, two cups water and one teaspoon of your favorite cinnamon.

Bring your apple spice mixture to a rolling boil for approximately 23-30 minutes stirring occasionally. Keep an eye on it to make sure it doesn’t boil over. 20-30 minutes may seem like a long time, but unlike the apple pie I was craving, this mixture doesn’t have the benefit of an hour in the oven to soften the apples.


By this time your house should smell quite delicious. Turn off the apple spice mixture and let it sit while you make your pancakes. The liquid will thicken up a little more and the apple and cinnamon flavors will concentrate.

Top your pancakes with a little butter if you like, next add the syrup and apple slices.

It looks very appetizing but it tastes even better. So dig in and enjoy!
