Specialty cakes are used as a part of the festivities, most commonly for wedding and birthday celebrations. Cakes are typically a light sweet baked dessert that are reserved for significant occasions. Religious festivities often feature cakes that are unique to that anniversary. At Christmas, people decorate Yule log cakes, and covered them with Christmas trimmings, like holly leave and pine cones. The increasing importance of specialty cakes in western culture is highly visible. They represent a cultural art form that is deeply imbedded into practically all important ceremonies, including ones that are not celebratory.

In contrast to normal bakeries, which may supply bread, cookies, and other baked goods, specialty cake shops focus their talents on designing and decorating edible cake sculptures. Because they are supplying a luxury good for events that are, at best, annual, specialty cakes are rarely impulse buys and must planned in advance. For this reason, the traditional street-shop is impractical for reaching their customers. Some shops, like Coco Cakes, operate out of traditional bakeries, but connect with their customers online, providing a catalog of past cake designs, a list of possible cake and icing flavours, and pricing guides. Because cakes are made to order, photographed and then delivered, a shop would have nothing to show to customers that couldn’t be more cheaply and conveniently conveyed over the internet. Typically cakeries will acquiesce to a tour of the flavour options at the request of the buyer.

Completed cakes are usually beautified with sugar frosting or almond paste, which are brightly coloured with food colouring. Higher end cake decorating often uses fondant instead of icing because it allows the artist a greater degree of control. Fondant can give the cakes a completely smooth appearance where even the best work with an icing knife might still leave lines. The artist may add embellishments using gum paste or additional icing to create flowers, lettering or a decorative trim. The market for novelty cakes has grown since the introduction of cheap ornamentation that could be completed by normal bakeries. Screening images onto wide single layer sheet cake is a popular choice for children’s birthday parties.
