This is a perfect Mom-on-the-go recipe. It contains only a few ingredients that most households already have on hand, using chicken breast for a healthy, packed with protein choice, and a short cooking time.
The recipe below serves two, adjust accordingly for the number of people you are serving.
Perfect Pesto Chicken

1 clove of garlic
2 tbsp shredded fresh basil leaves
1 tbsp olive oil
6-7 almonds or pine nuts
1 tbsp freshly shredded Parmesan cheese
2 boneless and skinless chicken breasts
Kick the tires and light the fires to 350 degrees.
1. Preheat your oven to 350 degrees, just in case you didn’t get my kick the tires reference above.
2. Assemble all of your ingredients in either a mortar and pestle or a food processor. The pesto can be crushed/diced either way. Purists will tell you a mortar and pestle is the only way to go. I used my mini food processor. Process it until it’s small chunks.
3.Place your chicken into a baking dish.
4. Spread the pesto evenly on top of the chicken breasts, coating the tops completely.
5.Bake in the oven for 25-30 minutes, until the inernal temperature of the chicken breasts reaches 165 degrees F at the minimum.
