Paleo Diet Recipe: Flank Steak Vinaigrette Salad

A big key to following any diet is to find recipes that are easy to make and delicious to eat.  This flank steak salad is a very satisfying salad that can be eaten for lunch or dinner.  The sweet pepper salsa adds a bit of a spicy zip to compliment the tang of the vinaigrette.  I ate this salad during week one of my Paleo Diet experiment.

This salad is a good example of tasty a meal can be, yet follow Paleo principles.  There is a variety of fresh vegetables combined with the lean protein from Flank steak.  Although it’s a tough cut, Flank steak is flavourful and is tender when cut thinly across the grain.  The Canadian Heart and Stroke Foundation consider Flank steak to be one of the eight beef cuts that are lean enough to qualify for its Health Check program. 


Flank Steak Vinaigrette Salad with Sweet Pepper Salsa


8 oz.                       Flank steak

1                              red onion thinly sliced.

1                              large tomato, cut into eight wedges

1                              bag of mixed salad greens

                                Sweet pepper Salsa

                                Cilantro Vinaigrette


 Prepare cilantro vinaigrette and sweet pepper salsa.  Pour the vinaigrette over the salsa and toss gently until combined.  Chill until ready to serve.

 Preheat a gas or charcoal grill until hot.  Trim any excess fat from the steak.  Grill the steak for 4-5 minutes per side.  Flank steak should never be cooked past medium rare to help keep it tender.  Once the steak is cooked, let it rest for five minutes then cut it in thin slices across the grain. 

 In a large bowl, place the salad greens, tomato and onions.  Add half the salsa mixture and toss.  Add the steak and toss.

 Plate the salad and then drizzle additional salsa vinaigrette over the steak and salad for additional flavour.


Cilantro Vinaigrette


¼ Cup                    cider vinegar

¼ Cup                    olive oil

1 T                          fresh chopped cilantro

1 t                           honey

1 t                           coarse/grainy mustard

¼ t                          each salt and pepper


Add all ingredients together and mix well until the dressing is emulsified.


Sweet Pepper Salsa


¾ Cup                    chopped sweet green pepper

¼ Cup                    jicama, peeled and finely chopped

2 T                          finely chopped red onion

1 T                          chopped cilantro

1                              serrano chile, seeded, deveined and finely chopped

1 ½ t                       red wine vinegar

¼ t                          salt


Combine all ingredients in a bowl until completely mixed.

 I like to provide Paleo compliant recipes to help people follow the Paleo Diet.  Too often, I hear that it’s very difficult to follow this way of eating.  People get hung up on the foods that they have to eliminate.  The fact that you can’t eat grains or dairy doesn’t mean that your menu is boring.  Try this recipe and discover who tasty Paleo eating can be.  Enjoy the recipe.
