My Family loves pizza and we love tacos. If we could have pizza four days a week and tacos three days a week I wouldn’t hear a complaint out of any of them including PapaBear. As for myself, I need variety and chances to be creative.
I think their enjoyment of pizza has a lot to do with the pizza dough recipe I use. Two years ago I reviewed Thursday Night Pizza by by Fr. Dominic Garramone and ever since then I use only one recipe, “American Style Pizza Crust.” The dough is very forgiving, light and delicious. It goes with anything, including our love for tacos.
That is how our Taco Muffins were born, by combining the delicious textures of pizza and the mouthwatering flavors in tacos. Enjoy!
Use your own, use my favorite, or grab a ready-made at the store. Roll into balls, roll flat and place into a greased muffin pan.
Add your choice of meats and top with your favorite toppings. Cook for 20 minutes at 400 degrees. They should slip out of the pan easily. This is very simple and delicious. Enjoy.
