The Vegetarian Slow Cooker is a must-have for people who are looking to reduce their meat consumption and still have quick and easy to prepare meals. As a busy mom, I really rely on my slow cooker and this cookbook helped me introduce vegetarian meals to my family and still be in and out of the kitchen quickly.
The Vegetarian Slow Cooker contains more than 200 vegetarian recipes that can be made in your slow cooker. The cookbook is broken down into 11 chapters.
There is an introduction chapter that discusses why the author chose to write this book. The cookbook contains a very informative section on how to use your slow cooker and includes information on time management, slow cooker basics, understanding your slow cooker and food safety.
The recipe chapters are broken down into Bread and Breakfast, Starters and Snacks, Soups, Fondues and Savories, Mostly Veggies, Pastas and Grains; Beans, Lentils, Tempeh, and Tofu; Sides, and Desserts. Each recipe is featured on one page and there are many gorgeous colorful photographs throughout.
The recipes include the recipe title, a brief description of the recipe, a detailed ingredients list that indicates both US and metric measurements, and step by step instructions. There are tips on each page that discuss the type of slow cooker, helpful information on the ingredients and possible substitutions.
The recipes are very easy to follow and the instructions are well written. There are recipes that use a variety of different sized slow cookers ranging from small (1 1/2 quart) to large (5 quart). Not all recipes can be made in all sized slow cookers. However, there are several recipes that can easily be halved to make smaller sizes.
Some recipes require the use of a slow cooker stoneware, souffle dishes, food processor, etc. Recipes are notated for exactly what equipment and supplies are required.
Since the cookbook is vegetarian, the recipes contain no meat. Many do contain dairy products such as ricotta cheese, milk and half and half. There are also several with eggs. When it's possible to use non-dairy substitutions, the recipe is notated as Vegan Friendly.
There's a great variety of recipes included that will please both adults and children. Gourmet recipes like Mixed Vegetable Coconut Curry will tempt your appetite while Lentil Sloppy Joes will satisfy even the pickiest child. I cannot wait to try the Creamy Italian Fondue!
