Owner Jason Ha has transformed the notion of a traditional steakhouse from stodgy and smoky into trendy and tasty. It's no longer a race for ex-race car drive Sean An who is now the chef at E3rd, but a slow-going endeavor with his special 24-hour marinating process for steaks.
