This line of reasoning, of course, applies to every manner of indiginous product simplified and cheapened for mass production - are people better off with access to the reduced version or virtually no access at all? Due to cost and distribution issues, that is the real question.</description>

<description>Shoyu no aji or the taste of shoyu is something that not everyone likes, but modernization has made of mockery of the aroma and taste of Japan. 

Unfortunately, I&#039;d like to add, the taste of freshly made tofu  or homemade dashi (bonita flake soup stock) or tsukemono (Japanese pickled vegetables). 

I guess that&#039;s what separates the gourmets from the gourmands.
